I would like to recommend an article from seomoz titled 'search engine ranking factors'. You would get a clear understanding on on-page and off-page factors for SEO purpose.
On-Page Optimization is done within your site. It deals with the proper use of title tags, meta tags, alt attributes, keywords, sitemap, heading tags, description and robots.txt.
Off-Page Optimization is done outside your site. It deals with building links. Social bookmarking, blog commenting, press release, link wheel, forum posting and hub page are just some of the techniques that falls under Off-Page.
